Easy Chicken Alfredo Pasta with Broccoli

8 oz fettuccine or pasta of choice

1 pound boneless, skinless chicken breasts, diced

2 cups broccoli florets

3 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

½ teaspoon salt

¼ teaspoon black pepper

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets. Drain both the pasta and broccoli, reserving about ½ cup of the pasta water.

    Sauté the Chicken: While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add the diced chicken, season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.

      Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Slowly whisk in the grated Parmesan cheese until the sauce is smooth and creamy.

        Combine Ingredients: Add the cooked chicken and drained pasta and broccoli back into the skillet with the Alfredo sauce. Toss everything together to coat the pasta and vegetables in the sauce. If the sauce is too thick, gradually add some reserved pasta water until desired consistency is reached.

          Serve: Plate the Chicken Alfredo and garnish with freshly chopped parsley for a pop of color. Enjoy your delicious meal!
