For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons honey

2 tablespoons soy sauce

2 tablespoons sriracha (adjust for spice preference)

2 cloves garlic, minced

1 tablespoon lime juice

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper, to taste

For the Slaw:

2 cups green cabbage, thinly sliced

1 cup red cabbage, thinly sliced

1 carrot, grated

ΒΌ cup cilantro, chopped

3 tablespoons apple cider vinegar

2 tablespoons honey

1 tablespoon lime juice

Salt and pepper, to taste

For Serving:

8 small corn or flour tortillas

Lime wedges, for garnish

Avocado slices (optional)

Instructions
 

Prepare the Shrimp Marinade: In a medium bowl, whisk together honey, soy sauce, sriracha, minced garlic, lime juice, smoked paprika, olive oil, salt, and pepper. Add the shrimp, toss to coat completely, and let marinate for 15-20 minutes.

    Make the Slaw: In a large bowl, combine green cabbage, red cabbage, grated carrot, and cilantro. In a separate small bowl, mix together apple cider vinegar, honey, lime juice, salt, and pepper. Pour the dressing over the slaw and toss until evenly coated. Set aside.

      Cook the Shrimp: In a large skillet over medium-high heat, add the marinated shrimp. Cook for 2-3 minutes on each side or until the shrimp are pink and opaque, being careful not to overcook them.

        Warm the Tortillas: While the shrimp are cooking, warm the tortillas in a dry skillet or wrap them in foil and place in a preheated oven.

          Assemble the Tacos: Take a warm tortilla and fill it with a generous handful of slaw, top it with a portion of spicy honey garlic shrimp, and add avocado slices if desired.

            Serve: Squeeze fresh lime juice over the tacos and serve immediately with extra lime wedges on the side.
