1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

16 oz cream cheese, softened to room temperature

½ cup powdered sugar

1 cup fresh strawberries, pureed and strained (approximately 1 ½ cups whole strawberries)

Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are evenly coated. Firmly press the mixture into the bottom of a lined 8x8 inch baking pan to create an even crust. Place the pan in the refrigerator to chill while you prepare the cheesecake filling.

    Make the Cheesecake Filling: In a large bowl, use a hand mixer or a stand mixer fitted with a paddle attachment to beat the softened cream cheese on medium speed until it is completely smooth and creamy, free of lumps. Gradually add in the powdered sugar, continuing to mix until fully incorporated and the mixture is light and fluffy.
