10 large jalapeños, sliced into ¼ inch rings

1 cup shredded sharp cheddar cheese

½ cup cream cheese, softened to room temperature

½ cup Panko breadcrumbs (for added crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

Prepare the Jalapeños: Begin by thoroughly washing the jalapeños under cool water. Pat them dry with a clean towel. Slice the jalapeños into coins approximately ¼ inch thick. For a milder flavor, you may choose to gently remove the seeds and membranes from the inside of the rings.

    Make the Cheesy Filling: In a medium-sized mixing bowl, combine the softened cream cheese and shredded sharp cheddar. Add the garlic powder, onion powder, smoked paprika, salt, and pepper. Using a fork or a spatula, mix everything until the mixture is creamy and evenly combined.

      Fill the Jalapeño Coins: Take each ring of jalapeño and use a spoon or a small scoop to fill the center with a generous dollop of your cheesy mixture. Press it lightly to help it stick. Repeat this process until all the jalapeño coins are filled.
