Ingredients

4 fresh white fish fillets (such as cod, tilapia, or haddock)

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to your preferred spice level)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

Olive oil spray

Lemon wedges (for serving)

Fresh parsley, finely chopped (for garnish)

Instructions

Marinate the Fish: Begin by placing the fresh fish fillets into a large bowl. Pour the buttermilk over the fillets until they are fully submerged. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes, or for the best flavor, marinate overnight. This step tenderizes the fish and infuses it with moisture.

Prepare the Coating: In a shallow dish, mix the all-purpose flour and cornmeal together. Add paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Stir well to ensure even distribution of all the spices, which will enhance the crispy exterior.

Coat the Fish: After marinating, remove the fish fillets from the buttermilk, allowing any excess liquid to drip back into the bowl. One by one, dredge each fillet into the prepared flour-cornmeal mixture, pressing gently to ensure good coverage. Shake off any excess coating and transfer the coated fillets to a clean plate.

Preheat the Air Fryer: Set your air fryer to 390°F (200°C) and allow it to preheat for approximately 5 minutes. Preheating ensures that the fish fillets start cooking immediately when placed inside.

Cook the Fish: Lightly spray the air fryer basket with olive oil to prevent sticking. Place the coated fish fillets in a single layer in the basket, making sure they do not overlap. For an added crunch, lightly spray the tops of the fillets with olive oil spray.

Air Fry: Cook the fillets for 10-12 minutes, flipping them halfway through the cooking process. The fish should be golden brown and have an internal temperature of 145°F (63°C) when fully cooked.

Serve: Carefully remove the fish fillets from the air fryer and allow them to rest for about a minute. Garnish with freshly chopped parsley for a vibrant touch and serve alongside lemon wedges for an added burst of flavor.
