Air Fryer Feta Pasta Cups

8 oz (225g) penne pasta

200g block of feta cheese

1 cup cherry tomatoes, halved

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional for spice)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook according to the package instructions, until it reaches an al dente texture. Once cooked, drain the pasta in a colander and set it aside to cool.

    Prepare the Feta Mixture: In a medium-sized mixing bowl, combine the halved cherry tomatoes, olive oil, minced garlic, dried oregano, and red pepper flakes (if using). Season with a pinch of salt and pepper. Gently toss the ingredients together until the tomatoes are well-coated in the olive oil and seasonings.

      Create the Pasta Cups: Preheat your Air Fryer to 350°F (175°C). In a large mixing bowl, combine the cooked penne pasta with the feta mixture, making sure to mix well so that each piece of pasta is evenly coated.

        Transfer to Air Fryer: Lightly grease the Air Fryer basket with a small amount of olive oil to prevent sticking. Spoon the pasta mixture into muffin or silicone cups, packing them tightly but not overflowing (fill each cup about 3/4 full).
