Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

¼ cup honey

¼ cup soy sauce

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon cornstarch (optional, for a thicker glaze)

½ teaspoon black pepper

½ teaspoon salt

2 green onions, sliced (for garnishing)

Sesame seeds (for garnishing)

Instructions

Prepare the Marinade: In a medium mixing bowl, combine the honey, soy sauce, minced garlic, grated ginger, sesame oil, rice vinegar, black pepper, and salt. Whisk the mixture thoroughly until it is well combined and smooth.

Marinate the Chicken: Add the chicken cubes to the bowl, ensuring each piece is evenly coated in the marinade. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld, or up to 2 hours for deeper flavor infusion.

Preheat the Air Fryer: Set your air fryer to preheat at 380°F (193°C) for about 5 minutes, which will help in achieving a perfect crisp on the chicken.

Prepare the Chicken for Cooking: After marinating, take the chicken out of the marinade. If you desire a thicker glaze, create a cornstarch slurry by mixing 1 teaspoon of cornstarch with 1 tablespoon of water. Stir this slurry into the remaining marinade before tossing the chicken cubes in it, ensuring they are well coated.

Cook the Chicken: Arrange the marinated chicken cubes in a single layer in the air fryer basket, making sure they are not overcrowded. Depending on the size of your air fryer, you may need to work in batches. Cook the chicken for 10-12 minutes, shaking the basket halfway through the cooking time for even browning.

Check for Doneness: Use a meat thermometer to ensure the internal temperature of the chicken has reached 165°F (74°C). If the chicken isn’t fully cooked, return it to the air fryer for an additional 2-3 minutes, checking intermittently.

Let it Rest and Garnish: Once the chicken is cooked, carefully remove it from the air fryer and let it rest for a couple of minutes. This will ensure juiciness. Garnish the chicken with sliced green onions and a sprinkle of sesame seeds for visual appeal.

Serve and Enjoy: Serve these delicious honey garlic chicken bites over steamed rice, alongside crisp vegetables, or as a delightful appetizer for your next gathering.
