Ingredients

1 medium head of cauliflower, cut into florets

1 cup breadcrumbs (substitute with gluten-free for a GF option)

1 cup grated Parmesan cheese (or vegan cheese for a plant-based alternative)

2 large eggs (or flax eggs for a vegan option)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

½ teaspoon salt

½ teaspoon black pepper

1 cup marinara sauce (preferably homemade or high-quality store-bought)

4 slider buns (choose whole wheat or gluten-free as desired)

Fresh basil leaves (for garnish)

Additional oil for greasing

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper and lightly greasing the parchment with oil to prevent the patties from sticking.

Prepare the Cauliflower: Place the cauliflower florets in a steamer basket and steam until tender, about 8-10 minutes. Once cooked, remove from heat and allow the florets to cool slightly.

Mash the Cauliflower: Transfer the cooled cauliflower into a large mixing bowl. Using a fork or potato masher, mash the cauliflower until you achieve a chunky yet cohesive mixture.

Combine Ingredients: Add the breadcrumbs, ¾ cup of grated Parmesan cheese, eggs (or flax eggs), garlic powder, onion powder, oregano, salt, and black pepper to the mashed cauliflower. Mix well until all ingredients are thoroughly combined and evenly distributed.

Shape Slider Patties: With clean hands, form the mixture into small patties, roughly the size of your slider buns. You should end up with about 8-10 patties.

Bake the Patties: Arrange the formed patties on the prepared baking sheet. Place them in the preheated oven and bake for 20-25 minutes, flipping them halfway through the baking process, until they are golden brown and firm to the touch.

Assemble the Sliders: Once the patties are baked, take them out of the oven. For each slider bun, place one patty on the bottom half. Generously spoon marinara sauce over each patty, then sprinkle with the remaining ¼ cup of Parmesan cheese. Optionally, place fresh basil leaves on top for added flavor.

Melt the Cheese: Return the assembled sliders to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serve and Enjoy: Remove the sliders from the oven and let them cool for about a minute. Place the top halves of the buns onto each slider. Serve warm with extra marinara sauce on the side for dipping. Enjoy your delightful Baked Cauliflower Parmesan Sliders!
