1/2 cup unsalted butter, cubed

1 tablespoon granulated sugar

1/4 teaspoon salt

1 teaspoon vanilla extract

1 cup all-purpose flour

2 large eggs

1/2 teaspoon baking powder

1/4 teaspoon ground cinnamon (for dough)

For Coating:

1/2 cup granulated sugar

1 tablespoon ground cinnamon

1/4 cup unsalted butter, melted (for brushing)

Preheat the Oven: Set your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

    Make the Dough: In a medium saucepan, combine the water, cubed butter, granulated sugar, and salt. Place over medium-high heat and bring the mixture to a boil, stirring occasionally until the butter is fully melted and combined.

      Add the Flour: Once boiling, remove the saucepan from the heat. Stir in the flour, vanilla extract, and baking powder. Use a wooden spoon to mix vigorously until a smooth dough forms and pulls away from the sides of the pan.

        Incorporate the Eggs: Allow the dough to cool for about 5 minutes. Then, one at a time, add the eggs, mixing well after each addition until the dough becomes smooth and glossy.

          Pipe the Churros: Transfer the prepared dough into a piping bag fitted with a large star tip. Pipe strips of dough that are about 4-6 inches long onto the lined baking sheet, ensuring they are spaced approximately 1 inch apart.

            Bake: Place the churros in the preheated oven and bake for 15-20 minutes, or until they are puffed up and golden brown.

              Prepare the Cinnamon Sugar Coating: While the churros are baking, combine the granulated sugar and ground cinnamon in a shallow bowl and mix until well combined.
