Banana Apple Oatmeal Bites

2 ripe bananas, thoroughly mashed

1 cup finely grated apple (approximately 1 medium apple)

1 ½ cups rolled oats

½ cup almond flour (or any flour of your choice)

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ cup honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon pure vanilla extract

½ teaspoon baking soda

¼ teaspoon salt

Optional: ½ cup chopped nuts (such as walnuts or pecans) or semi-sweet chocolate chips for extra flavor

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

    Mix the Dry Ingredients: In a large mixing bowl, add the rolled oats, almond flour, ground cinnamon, nutmeg, baking soda, and salt. Whisk these dry ingredients together until evenly combined.

      Prepare the Wet Ingredients: In a separate bowl, mash the ripe bananas with a fork or potato masher until they form a smooth consistency. To the mashed bananas, add in the grated apple, honey or maple syrup, and vanilla extract. Mix these wet ingredients together until fully combined.

        Combine the Mixtures: Gently pour the wet mixture into the bowl containing the dry ingredients. Use a spatula to fold the mixtures together, being careful not to overmix. If you opted for nuts or chocolate chips, gently fold them in at this stage.

          Shape the Bites: Using a tablespoon or a small ice cream scoop, drop rounded spoonfuls of the mixture onto the prepared baking sheet. Make sure to leave about 2 inches of space between each bite to allow for even baking.

            Bake: Transfer the baking sheet to the oven and bake for 12-15 minutes. The bites should be golden brown and firm to the touch when done.

              Cool and Serve: Once baked, remove the sheet from the oven and allow the bites to cool on the baking sheet for about 5 minutes. After that, use a spatula to transfer them to a wire rack to cool completely.
