Prepare the Blueberry Mixture: In a blender, combine the fresh blueberries, lemon juice, lemon zest, honey, and a pinch of salt. Blend the mixture until smooth, but if you prefer some texture, leave a few small blueberry bits intact. Taste the mixture and adjust the sweetness by stirring in additional honey if desired.

    Mix the Yogurt Base: In a separate mixing bowl, add the Greek yogurt and vanilla extract. Use a spatula or whisk to mix until the yogurt is smooth and creamy, ensuring there are no lumps.

      Layer the Mixtures: Take your popsicle molds and start by pouring a layer of the yogurt mixture into the bottom of each mold. Fill each mold about one-third full to leave room for the blueberry layer.

        Add the Blueberry Layer: Carefully spoon the blueberry mixture on top of the yogurt layer in each mold, filling them about 1/2 to 3/4 full, depending on how much you want each layer to shine through.
