4 large flour tortillas

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

4 large eggs

1/2 cup milk

1 small onion, finely diced

1 red bell pepper, finely diced

1 cup fresh spinach, roughly chopped

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and black pepper, to taste

1 tablespoon olive oil

1 jalapeño, thinly sliced (optional for added heat)

Salsa and sour cream, for serving

Prepare the Egg Mixture: In a medium-sized mixing bowl, whisk together the eggs and milk until well combined. Season the mixture with garlic powder, ground cumin, salt, and pepper. Set this aside to allow the flavors to meld.

    Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add the finely diced onion and red bell pepper to the skillet. Sauté the vegetables for about 5-7 minutes, or until they are softened and slightly caramelized. Next, stir in the chopped spinach and cook for an additional 2 minutes, or until the spinach is wilted. Once done, remove the vegetable mixture from the skillet and set aside.

      Scramble the Eggs: In the same skillet, pour in the seasoned egg mixture. Cook the eggs over medium heat, gently stirring with a spatula until they are scrambled and cooked through. Once finished, remove the eggs from the heat and set aside.

        Assemble the Quesadillas: On a clean, flat surface, lay one tortilla down. Sprinkle 1/4 cup of cheddar cheese and 1/4 cup of Monterey Jack cheese on one half of the tortilla. Then, layer on a generous portion of the sautéed vegetable mixture followed by a scoop of scrambled eggs. Top with an additional 1/4 cup of cheddar cheese and 1/4 cup of Monterey Jack cheese. Fold the tortilla in half over the filling, pressing down gently to secure.

          Cook the Quesadillas: Wipe the skillet clean to remove any leftover bits. Heat the skillet again over medium heat, adding a splash of olive oil if necessary. Place the folded quesadilla in the skillet and cook for about 2-3 minutes on each side, or until the quesadilla is golden brown and crispy. Repeat this step for the remaining tortillas.

            Slice and Serve: Once cooked, remove each quesadilla from the skillet and slice them into wedges. Serve warm with salsa and sour cream on the side for dipping. For those who enjoy a bit of spice, garnish with freshly sliced jalapeños on top.
