Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried oregano

1 cup buttermilk

1/4 cup extra-virgin olive oil

2 large eggs

1 cup diced cooked ham or pancetta

1/2 cup diced salami

1 cup shredded sharp cheddar cheese

1/2 cup crumbled feta cheese

1/2 cup sliced olives (green or black)

1/4 cup fresh parsley, chopped (optional, for garnish)

Instructions

Preheat Oven: Begin by preheating your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it with non-stick spray to prevent sticking.

Mix Dry Ingredients: In a spacious mixing bowl, combine the flour, baking powder, baking soda, salt, black pepper, and dried oregano. Whisk these dry ingredients together until they are well mixed.

Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, olive oil, and eggs until the mixture is smooth and fully incorporated.

Combine Mixtures: Gradually pour the wet mixture into the bowl with the dry ingredients. Using a spatula or wooden spoon, stir until just combined. Be careful not to overmix; it’s okay if a few lumps remain.

Add Charcuterie Elements: Carefully fold in the diced ham or pancetta, diced salami, shredded cheddar cheese, crumbled feta, and sliced olives. Make sure these ingredients are evenly distributed throughout the muffin batter.

Fill Muffin Tin: Using a scoop or spoon, divide the muffin batter evenly among the muffin cups, filling each one about three-quarters full for optimal rise.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes. The muffins should turn a lovely golden brown, and a toothpick inserted into the center of a muffin should come out clean.

Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Carefully transfer them to a wire rack to cool completely. Serve warm, and if desired, garnish with chopped fresh parsley for a burst of color.
