Ingredients
  

2 cups cooked jasmine rice (preferably day-old for the best texture)

1 tablespoon vegetable oil

3 slices pancetta or prosciutto, diced

1/2 cup salami, diced

1/2 cup smoked gouda, shredded

1/4 cup pickled vegetables (such as carrots, cucumbers, or radishes), chopped

1/2 cup cherry tomatoes, halved

1/4 cup green onions, finely sliced

2 large eggs, beaten

2 tablespoons soy sauce

1 tablespoon balsamic vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Fresh herbs (such as parsley or chives) for garnish

Prepare the Rice: If using freshly cooked rice, spread it evenly on a baking sheet and allow it to cool for at least 30 minutes to help dry it out and prevent clumping. Day-old rice works best!

    Cook the Meat: In a large skillet or wok, heat the vegetable oil over medium heat. Add the diced pancetta or prosciutto and cook until crispy, about 3-4 minutes. Once ready, use a slotted spoon to remove it from the skillet and set aside.

      Sauté the Salami: In the same skillet, add the diced salami. Cook for about 2 minutes, stirring occasionally, until it becomes slightly crispy. Remove and set aside with the pancetta.

        Scramble the Eggs: Pour the beaten eggs into the skillet and scramble them quickly, cooking just until set. Remove from the heat and set aside with the cooked meats.

          Stir-Fry the Rice: Add the cooled jasmine rice to the skillet. Stir-fry for about 5 minutes until heated through and slightly crispy at the edges.

            Mix in the Flavors: Pour in the soy sauce, balsamic vinegar, and sprinkle the garlic powder over the rice. Season with salt and pepper to taste, stirring well to evenly coat the rice with these flavors.

              Add Charcuterie Elements: Fold in the crispy pancetta, salami, shredded smoked gouda, chopped pickled vegetables, halved cherry tomatoes, and sliced green onions. Continue to stir-fry for an additional 2-3 minutes, allowing the cheese to melt slightly into the rice.
