8 oz (about 2 cups) elbow macaroni

1 cup pumpkin puree (canned or fresh)

2 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1 cup milk

1/2 cup heavy cream

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon nutmeg

Salt and pepper to taste

1/2 teaspoon smoked paprika (optional, for added flavor)

1/2 cup breadcrumbs (preferably panko)

2 tablespoons unsalted butter, melted

Fresh parsley or thyme for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

      Prepare Cheese Sauce: In a medium saucepan over medium heat, combine the pumpkin puree, milk, and heavy cream. Stir until well combined and heated through (about 2-3 minutes).

        Add Seasonings: Sprinkle garlic powder, onion powder, nutmeg, smoked paprika, salt, and pepper into the sauce. Mix well.

          Incorporate Cheeses: Gradually add the grated cheddar and mozzarella cheese into the saucepan, stirring constantly until the cheese is melted and smooth. Taste the sauce and adjust seasoning if necessary.
