2 cups cooked chicken, shredded

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced bell peppers (any color)

1 teaspoon ground cumin

1 teaspoon chili powder

8 large flour tortillas

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup salsa

½ cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Optional: sliced jalapeños (for added spice)

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish to prevent sticking.

    Make the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, drained black beans, corn, diced bell peppers, ground cumin, chili powder, and season with salt and pepper. Stir until all ingredients are well-mixed and coated with the spices.

      Layer the Tortillas: Take half of the flour tortillas and arrange them in a single layer across the bottom of the prepared baking dish. You can slightly overlap them if needed to cover the entire bottom.

        Add the Filling: Evenly spread half of the chicken mixture over the tortillas. Next, sprinkle 1 cup of cheddar cheese and ½ cup of Monterey Jack cheese on top of the chicken layer.
