Cheesy Spinach & Artichoke Dip Pasta

8 ounces fusilli pasta (or your favorite pasta)

1 tablespoon olive oil

2 cloves garlic, minced

1 cup fresh spinach, chopped

1 can (14 ounces) artichoke hearts, drained and roughly chopped

1 cup cream cheese, softened to room temperature

1 cup sour cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese (plus additional for topping)

1 teaspoon onion powder

1 teaspoon garlic powder

½ teaspoon red pepper flakes (optional for heat)

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the fusilli pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta and set aside.

    Sauté Garlic and Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Then, add the chopped spinach and sauté for an additional 2-3 minutes until it wilts down.

      Incorporate Artichokes: Mix in the chopped artichoke hearts into the skillet. Cook for another 2 minutes, allowing the artichokes to warm through and blend with the other flavors.

        Create the Creamy Base: Reduce the heat to medium-low. Add the softened cream cheese and sour cream to the skillet, stirring continuously until the mixtures come together into a creamy consistency.

          Add the Cheeses: Gradually mix in the grated Parmesan cheese and shredded mozzarella. Continue stirring until the cheese has melted and the sauce is smooth. If the mixture is too thick, add a splash of reserved pasta water to adjust the consistency to your preference.
