Cheesy Spinach & Mushroom Lasagna

9 lasagna noodles

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini)

5 cups fresh spinach, roughly chopped

1 teaspoon dried oregano

Salt and freshly ground black pepper to taste

15 ounces ricotta cheese

1 large egg

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

3 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) to ensure it’s hot and ready for baking.

    Cook the Lasagna Noodles: Fill a large pot with salted water and bring it to a rolling boil. Add the lasagna noodles and cook according to package instructions until al dente. Once cooked, drain the noodles and set them aside to cool.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing for about 2-3 minutes until the onion becomes fragrant and translucent. Then add the sliced mushrooms, cooking for another 5-7 minutes until they soften and release their moisture.

        Add Spinach: Stir in the roughly chopped spinach along with the dried oregano, cooking until the spinach is wilted, which should take around 2-3 minutes. Season the mixture with salt and freshly ground black pepper to taste. Once finished, remove the skillet from heat and allow the mixture to cool slightly.

          Prepare the Ricotta Mixture: In a medium-sized mixing bowl, combine the ricotta cheese, the large egg, half of the grated Parmesan cheese, and a pinch of salt. Mix together until smooth and well blended.

            Assemble the Lasagna:

              - Start by spreading a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish to prevent sticking.

                - Place three lasagna noodles horizontally on top of the sauce.

                  - Spread half of the ricotta mixture evenly over the noodles.

                    - Spoon half of the sautéed spinach and mushroom mixture over the ricotta layer.

                      - Sprinkle approximately one-third of the shredded mozzarella cheese on top.

                        - Repeat the layering process: another thin layer of sauce, three more lasagna noodles, the remaining ricotta mixture, the rest of the spinach mixture, and about one-third of the mozzarella cheese.

                          - Finally, layer the last three noodles on top, covering them with any remaining marinara sauce, the remaining mozzarella cheese, and the rest of the Parmesan cheese.

                            Bake the Lasagna: Cover the baking dish tightly with aluminum foil (to prevent it from sticking, lightly spray the foil with cooking spray) and place it in the preheated oven. Bake for 25 minutes. Remove the foil and continue baking for an additional 15-20 minutes or until the top is bubbly and golden brown.

                              Cool and Serve: Once the lasagna is finished baking, remove it from the oven and allow it to rest for about 10-15 minutes. This will make slicing easier and will help to set the layers. Before serving, garnish with fresh basil leaves for an added hint of color and flavor if desired.
