Ingredients

4 boneless, skinless chicken breasts

1 cup fresh or frozen pitted cherries

1/2 cup low-sodium chicken broth

1/4 cup balsamic vinegar

1/4 cup honey

2 tablespoons soy sauce

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnishing)

Instructions

Prepare the Cherry Glaze:

    - In a medium saucepan set over medium heat, combine the pitted cherries, chicken broth, balsamic vinegar, honey, soy sauce, minced garlic, and thyme.

      - Stir the mixture well until fully combined, then bring it to a gentle boil.

        - Once boiling, reduce the heat to low and let the glaze simmer for 10-15 minutes. Stir occasionally until the sauce thickens slightly and the cherries become tender.

          Prep the Chicken:

            - As the glaze simmers, season both sides of the chicken breasts generously with salt and pepper.

              - In a large skillet, heat the olive oil over medium-high heat. When the oil is shimmering, carefully add the seasoned chicken breasts to the skillet.

                Cook the Chicken:

                  - Sear the chicken breasts for approximately 6-7 minutes on each side, or until they are golden brown and cooked through. (Use a meat thermometer to ensure the internal temperature reaches 165°F/75°C).

                    - Once cooked, transfer the chicken to a plate and cover it loosely to keep warm.

                      Finish the Glaze:

                        - In the same skillet (which retains delicious bits), pour in the previously prepared cherry glaze. Increase the heat to medium-high and bring the glaze to a boil for about 2-3 minutes, allowing it to caramelize slightly. Stir continuously to prevent any sticking or burning.

                          Combine:

                            - Add the seared chicken breasts back into the skillet with the glaze. Make sure to coat each piece thoroughly with the sauce. Heat everything together for an additional minute just to warm the chicken.

                              Serve:

                                - Transfer the glazed chicken to a serving platter, arranging them neatly. Drizzle the remaining cherry glaze generously over the top and finish with a sprinkle of chopped parsley for a fresh touch.

                                  Enjoy:

                                    - Serve the Sweet and Tart Cherry Glazed Chicken warm, accompanied by your favorite sides, such as fluffy rice or roasted vegetables, to relish the delightful flavors.
