Ingredients

1 pound large shrimp, peeled and deveined

2 cups mixed salad greens (arugula, spinach, and frisée)

1 cup fresh cherries, pitted and halved

1/2 cup cucumber, thinly sliced

1/4 cup red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup walnuts, toasted and roughly chopped

1 tablespoon olive oil (for shrimp)

1 tablespoon olive oil (for dressing)

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard

Salt and pepper, to taste

Fresh mint leaves, for garnish

Instructions

Prepare the Shrimp: Heat a medium skillet over medium heat and add 1 tablespoon of olive oil. Once the oil is shimmering, add the peeled and deveined shrimp to the skillet. Season the shrimp lightly with a pinch of salt and pepper. Sauté for 3-4 minutes, turning occasionally, until the shrimp turns pink and opaque. Once cooked, remove the skillet from heat and let the shrimp cool for a few minutes.

Make the Dressing: In a small mixing bowl, whisk together 1 tablespoon of olive oil, apple cider vinegar, Dijon mustard, and seasoning of salt and pepper. Continue whisking until the dressing is well combined and emulsified. Taste and adjust the seasoning as desired.

Assemble the Salad: In a large serving bowl, create a base layer with the mixed salad greens, spreading them evenly across the bottom. Arrange the halved cherries, thin cucumber slices, and red onion on top of the greens. Sprinkle the crumbled feta cheese and toasted walnuts over the salad for added texture and flavor.

Add the Shrimp: Gently place the cooked shrimp on top of the salad arrangement. Drizzle the prepared dressing evenly over the entire bowl, ensuring that each component is lightly coated in the flavorful dressing.

Garnish and Serve: Top the salad with fresh mint leaves, adding a pop of color and refreshing aroma. Serve the salad immediately for the best flavor, or place it in the refrigerator for 15-20 minutes for a chilled salad experience.
