Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Lightly grease the wells of a mini muffin tin with olive oil to prevent sticking.

    Prepare the Egg Mixture: In a large mixing bowl, crack the eggs and whisk them vigorously until the yolks and whites are fully blended. Add in the chili powder, cumin, salt, and pepper, whisking again until all the spices are combined throughout.

      Mix in the Veggies and Cheese: Gently fold in the shredded sharp cheddar cheese along with the diced bell peppers, crumbled sausage (if using), rinsed black beans, corn kernels, and finely diced jalapeño. Ensure all ingredients are evenly distributed throughout the egg mixture.
