4 boneless, skinless chicken breasts (approximately 1.5 lbs)

Salt and freshly ground black pepper, to taste

1 cup all-purpose flour, for dredging

4 tablespoons olive oil

4 tablespoons unsalted butter

8 ounces cremini mushrooms, sliced

3 cloves garlic, finely minced

1 cup Marsala wine (sweet or dry, according to your preference)

1 cup chicken broth

2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions
 

Prep the Chicken: Begin by seasoning both sides of the chicken breasts generously with salt and pepper. Evenly dredge each breast in the flour, ensuring to shake off any excess flour to prevent clumping.

    Sear the Chicken: In a large skillet over medium-high heat, combine 2 tablespoons of olive oil and 2 tablespoons of butter. Once the butter has melted and the mixture is hot, place the chicken breasts into the skillet. Sear for approximately 4-5 minutes on each side, or until they develop a beautiful golden-brown crust and are cooked through. Once done, transfer them to a plate and cover with aluminum foil to keep warm.

      Cook the Mushrooms: In the same skillet, add the remaining 2 tablespoons of olive oil and 2 tablespoons of butter. Allow the butter to melt completely, then add the sliced cremini mushrooms. Sauté the mushrooms for about 5-7 minutes, stirring occasionally, until they are nicely browned and tender.
