2 cups elbow macaroni

2 cups fresh or frozen peas

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk (whole or 2%)

2 cups sharp cheddar cheese, shredded

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons grated Parmesan cheese (optional, for topping)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the macaroni according to package directions until al dente. In the final two minutes of cooking, add the peas to the pot. Drain the pasta and peas, then set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour, stirring constantly for about 1-2 minutes to create a roux.

      Add Milk: Gradually whisk in the milk, ensuring no lumps form. Continue cooking and stirring until the mixture thickens, about 5-7 minutes.

        Incorporate the Cheese: Reduce the heat to low and stir in the shredded cheddar cheese until melted and smooth. Add the Dijon mustard, garlic powder, onion powder, and season with salt and pepper to taste.

          Combine: Add the drained macaroni and peas back into the pot, stirring until the pasta is well-coated with the cheese sauce.
