Classic Shepherd’s Pie

1 lb (450g) ground lamb or beef

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

1 cup frozen peas

1 tablespoon tomato paste

1 tablespoon Worcestershire sauce

1 cup beef broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

2 tablespoons olive oil

For the Mashed Potato Topping:

4 large russet potatoes, peeled and quartered

1/2 cup milk (or cream for extra richness)

4 tablespoons unsalted butter

Salt and pepper, to taste

1/2 cup grated cheddar cheese (optional, for topping)

Instructions
 

Prepare the Meat Filling:

    - In a large skillet over medium heat, add olive oil and sauté the chopped onions for about 3-4 minutes until translucent. Then, add minced garlic and diced carrots, cooking for an additional 3 minutes.

      - Increase the heat to medium-high, add the ground lamb or beef. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

        - Stir in tomato paste, Worcestershire sauce, dried thyme, and dried rosemary. Mix well.

          - Pour in the beef broth and add the frozen peas. Season with salt and pepper. Let it simmer for 5-7 minutes until the mixture thickens slightly, then remove from heat.

            Make the Mashed Potato Topping:

              - While the meat filling is simmering, place the peeled and quartered potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over high heat.

                - Cook the potatoes for about 15-20 minutes or until tender. Drain and return to the pot.

                  - Add milk and butter to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.

                    Assemble the Shepherd’s Pie:

                      - Preheat your oven to 400°F (200°C).

                        - In a baking dish (around 9x9 inches), spread the meat filling evenly at the bottom. Gently spoon the mashed potatoes over the meat mixture, using a spatula to spread it evenly. If desired, sprinkle the grated cheddar cheese on top for extra flavor and a golden finish.

                          Bake the Pie:

                            - Place the assembled Shepherd's Pie in the preheated oven and bake for 25-30 minutes or until the top is slightly golden and the filling is bubbling around the edges.
