Ingredients

For the Meatloaf:

2 pounds ground turkey

1 cup whole wheat breadcrumbs

1/2 cup finely chopped onion

1/2 cup finely chopped bell pepper (red, green, or yellow)

1/4 cup fresh parsley, finely chopped

2 large eggs

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup milk (or chicken broth)

For the Glaze:

1/2 cup ketchup

2 tablespoons brown sugar

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1/4 teaspoon smoked paprika (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). This ensures that your meatloaf cooks evenly.

Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground turkey, whole wheat breadcrumbs, finely chopped onion, bell pepper, parsley, beaten eggs, minced garlic, dried thyme, dried oregano, salt, black pepper, and milk. Mix the ingredients together using your hands or a spatula until just combined. Be careful not to overmix, as this can make the meatloaf dense.

Shape the Meatloaf: Once mixed, transfer the meat mixture onto a baking sheet lined with parchment paper or into a lightly greased loaf pan. Shape the mixture into a loaf, approximately 2 inches high and 4 inches wide.

Make the Glaze: In a small mixing bowl, whisk together the ketchup, brown sugar, Dijon mustard, apple cider vinegar, and smoked paprika until the mixture is smooth and well combined.

Glaze the Meatloaf: Brush half of the glaze mixture evenly over the top of the meatloaf, allowing it to infuse flavor during baking. Set aside the remaining glaze for later use.

Bake: Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature registers 165°F (74°C). If you desire a crunchy topping, you can broil it for an additional 2-3 minutes at the end of baking.

Add Final Glaze: In the last 10 minutes of baking, brush the reserved glaze over the meatloaf for a delightful sticky finish.

Rest and Serve: Remove the meatloaf from the oven and let it rest for 10-15 minutes. This resting period allows the juices to redistribute, keeping your meatloaf moist and flavorful.

Plate Up: Slice the meatloaf into equal portions and serve warm. Garnish with extra chopped parsley if desired. This dish pairs wonderfully with classic sides like creamy mashed potatoes or steamed seasonal vegetables for a comforting meal.
