Ingredients

1 cup orzo pasta

2 cups water

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 red bell pepper, diced

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions

Cook the Orzo:

In a medium-sized saucepan, bring 2 cups of water to a rolling boil. Add the orzo pasta along with a pinch of salt. Cook the orzo following the package instructions, which typically takes about 8-10 minutes, until it reaches an al dente texture. Once cooked, drain the pasta and rinse it under cold water to stop the cooking process and cool it down. Set the orzo aside in a large mixing bowl.

      Prepare the Vegetables:

While waiting for the orzo to cook, take a moment to chop the cucumber, cherry tomatoes, red onion, and red bell pepper into small, uniform pieces. Add these vibrant veggies to the bowl with the cooled orzo.

          Incorporate the Olives and Cheese:

Gently fold in the sliced Kalamata olives and crumbled feta cheese to the bowl with the vegetables and orzo, combining all the elements for a delightful medley of flavors.

              Create the Dressing:

In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, and a dash of salt and pepper until the mixture is fully combined and emulsified. This dressing will elevate the flavors of your salad.

                  Combine All Components:

Pour the dressing over the bowl of orzo, vegetables, and cheese. Using a large spoon, carefully toss everything together until all the ingredients are well-coated with the dressing, taking care not to mush the feta cheese.

                      Garnish and Chill:

Sprinkle the freshly chopped parsley on top for a burst of color and fresh flavor. Cover the mixing bowl with plastic wrap or a lid and place it in the refrigerator for at least 30 minutes. This chilling period allows the flavors to meld beautifully.

                          Serve with Style:

After chilling, give the salad a gentle toss to redistribute the ingredients. Serve in individual bowls or on a large platter as a refreshing side dish or a light main course, perfect for any occasion.
