8 oz rice noodles (or your preferred type of noodles)

1 cup shredded carrots

1 red bell pepper, thinly sliced

1 cucumber, julienned

1/4 cup green onions, chopped (plus extra for garnish)

1/4 cup fresh cilantro leaves (plus extra for garnish)

1/4 cup chopped peanuts (for garnish)

1 tablespoon sesame seeds (for garnish)

Peanut Sauce:

1/2 cup creamy peanut butter

3 tablespoons soy sauce

2 tablespoons rice vinegar

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

1 tablespoon freshly grated ginger

2 cloves garlic, minced

1-3 tablespoons water (to adjust the sauce consistency)

Juice of 1 lime

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a rolling boil. Add the rice noodles and cook according to the package instructions until they are al dente. Once cooked, drain the noodles and rinse them under cold water to halt the cooking process. Set aside to cool.

    Prepare the Peanut Sauce: In a medium mixing bowl, combine the creamy peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, grated ginger, minced garlic, and lime juice. Whisk these ingredients together until they are smooth. Gradually add water, one tablespoon at a time, mixing until you achieve your desired sauce consistency suitable for drizzling.

      Combine the Ingredients: In a large mixing bowl, combine the cooled noodles with shredded carrots, sliced red bell pepper, julienned cucumber, and half of the chopped green onions and cilantro.
