Cozy One-Pan Pumpkin Spice Chicken with Sweet Apples

4 boneless, skinless chicken breasts

1 medium onion, sliced

2 medium apples, cored and sliced (preferably Honeycrisp or Granny Smith)

1 cup pumpkin puree

1/4 cup chicken broth

3 tbsp maple syrup

1 tbsp pumpkin spice blend

2 cloves garlic, minced

2 tbsp olive oil

Salt and pepper to taste

Fresh sage leaves for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large, oven-safe skillet, heat the olive oil over medium-high heat.

      Season the chicken breasts with salt, pepper, and half of the pumpkin spice blend. Once the oil is hot, add the chicken to the skillet and sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

        In the same skillet, add the sliced onion and sauté for 2-3 minutes until they become translucent. Then, add the minced garlic and cook for another minute until fragrant.

          Add the sliced apples to the skillet and let them cook for about 2 minutes, stirring occasionally.

            In a medium bowl, mix together the pumpkin puree, chicken broth, maple syrup, and the remaining pumpkin spice blend. Stir until well combined.

              Return the chicken to the skillet, then pour the pumpkin mixture over the chicken and apples, ensuring everything is evenly coated.

                Place the skillet in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

                  Once done, remove the skillet from the oven and let it rest for a few minutes. Garnish with fresh sage leaves if desired before serving.
