2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

3 medium carrots, diced

2 stalks celery, diced

1 medium potato, peeled and cubed

1 cup zucchini, diced

1 cup bell pepper, diced (any color)

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

1 cup heavy cream

2 cups sharp cheddar cheese, shredded

Fresh parsley, for garnish (optional)

Instructions
 

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Vegetables: Add the diced carrots and celery to the pot. Cook for 5–7 minutes, stirring occasionally until they start to soften.

      Incorporate Potatoes and Zucchini: Mix in the cubed potato and diced zucchini, stirring to combine. Cook for another 3–4 minutes.

        Pour in the Broth: Add the bell pepper, vegetable broth, dried thyme, and dried oregano to the pot. Season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat and let simmer for 15–20 minutes, or until the vegetables are tender.

          Creamy Consistency: Once the vegetables are cooked, reduce the heat to low and stir in the heavy cream. Allow it to heat through for about 5 minutes, mixing well.

            Cheesy Goodness: Gradually stir in the shredded cheddar cheese, allowing it to melt and blend into the soup. Continue to stir until the soup is smooth and creamy. Taste and adjust seasoning if necessary.
