1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/2 cup chocolate chips (optional)

1/4 cup chopped nuts (such as walnuts or pecans, optional)

Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.

    In a large mixing bowl, combine the softened butter, packed brown sugar, and granulated sugar. Use a hand mixer or a whisk to cream the mixture together until it becomes light and fluffy, about 2-3 minutes.

      Add the egg and vanilla extract to the creamed mixture, beating until everything is fully incorporated and smooth.

        In a separate medium bowl, whisk together the all-purpose flour, rolled oats, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt, ensuring there are no clumps.

          Gradually add the dry ingredient mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix, as this can make the cookies tough.

            Carefully fold in the tightly squeezed shredded zucchini, chocolate chips, and chopped nuts (if you are including them) with a spatula until evenly distributed.
