Ingredients

8 oz goat cheese, softened at room temperature

4 oz cream cheese, softened at room temperature

1/2 cup dried cranberries, finely chopped

1/2 cup pecans, finely chopped

2 tablespoons honey, plus extra for drizzling

1 teaspoon freshly grated orange zest

1 teaspoon fresh thyme leaves (optional for an aromatic touch)

1/4 teaspoon salt

Crackers or sliced baguette, for serving

Instructions

Prepare the Cheese Mixture: In a large mixing bowl, combine the softened goat cheese and cream cheese. Using a hand mixer on low speed or a spatula, mix until the cheeses are thoroughly blended and the texture is smooth and creamy.

Incorporate Flavor Components: Gently fold in the finely chopped dried cranberries, pecans, honey, freshly grated orange zest, thyme leaves (if using), and salt. Stir until all ingredients are well combined and evenly distributed within the cheese mixture.

Shape the Log: Place a large piece of plastic wrap or parchment paper on a clean flat surface. Spoon the cheese mixture into the center of the wrap. Using the wrap, carefully shape the mixture into a log by rolling it tightly while twisting the ends to secure the shape. Refrigerate for at least 2 hours, or ideally overnight, to allow the log to firm up for easier slicing.

Coat the Log: Once the cheese log has chilled and firmed, remove it from the wrap. Gently roll the log in any leftover chopped pecans and cranberries, applying light pressure to help them adhere to the surface.

Serve: Place the decorated cheese log on a serving platter. Using a sharp knife, slice it into rounds. Arrange the slices aesthetically and serve with an assortment of crackers or slices of fresh baguette. For an extra touch of sweetness and presentation, drizzle a little honey over the top just before serving.
