12 oz (340g) spaghetti or linguine

2 ripe avocados, halved and pitted

1/4 cup fresh lime juice (approximately 2 limes)

1/2 cup fresh basil leaves, tightly packed

2 cloves garlic, minced

1/4 cup high-quality extra virgin olive oil

Sea salt and freshly ground black pepper, to taste

1/3 cup freshly grated Parmesan cheese (optional)

Zest of 1 lime

Handful of cherry tomatoes, halved (for garnish)

Extra basil leaves (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to the package instructions until al dente. Once cooked, reserve 1 cup of the pasta cooking water. Drain the pasta and set aside.

    Prepare the Avocado Sauce: In a food processor or blender, combine the flesh of the halved avocados, fresh lime juice, packed basil leaves, minced garlic, and extra virgin olive oil. Season with sea salt and freshly ground black pepper. Blend on high speed until the mixture is completely smooth and creamy. If the sauce is too thick for your liking, gradually add some of the reserved pasta water until you reach your desired consistency.

      Combine Pasta and Sauce: In a large mixing bowl, gently fold the cooked pasta into the creamy avocado sauce. Toss thoroughly to ensure all the pasta is coated. If you find the sauce too thick, add more of the reserved pasta water, one tablespoon at a time, until the pasta achieves a luscious, creamy consistency.
