8 oz fettuccine pasta

1 lb shrimp, peeled and deveined

2 tablespoons Cajun seasoning

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), sliced

1 medium onion, diced

1 cup fresh spinach leaves

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to the package directions until al dente. Drain and set aside, reserving a bit of the pasta water for later use if needed.

    Season the Shrimp: In a medium bowl, add the peeled and deveined shrimp. Sprinkle the Cajun seasoning over the shrimp and toss gently until they are well-coated and evenly seasoned.

      Sauté the Shrimp: Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned shrimp to the skillet. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove the cooked shrimp from the skillet and transfer to a plate. Set aside.

        Sauté the Vegetables: In the same skillet, add the diced onion and sliced bell pepper. Sauté for 3-4 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized. Add the minced garlic and continue to cook for an additional minute until fragrant.

          Make the Creamy Sauce: Carefully pour in the chicken broth, scraping any browned bits from the bottom of the skillet. Allow it to simmer for 2-3 minutes. Next, lower the heat to medium-low and stir in the heavy cream, allowing the sauce to gently thicken for about 5 minutes.

              Add Pasta and Cheese: Finally, gently fold in the cooked fettuccine and grated Parmesan cheese. Stir until the pasta is well-coated in the creamy sauce. If the sauce is too thick, add a splash of reserved pasta water to achieve your desired consistency.
