Ingredients

8 oz (about 2 cups) pasta (penne, rotini, or your favorite shape)

2 cups cooked chicken, shredded or diced

2 cups fresh spinach (or substitute with 2 cups frozen spinach, thawed and well-drained)

2 cups heavy cream

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional for added heat)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it reaches the right temperature for baking.

Cook the Pasta: In a large pot of boiling salted water, add the pasta and cook according to the package instructions until it's al dente (slightly firm to the bite). Once cooked, drain the pasta and set it aside.

Sauté the Spinach: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic to the pan and sauté for about 1 minute, just until it's fragrant. Add the fresh spinach and cook for 2-3 minutes, stirring frequently, until the spinach has wilted. If you're using frozen spinach, ensure it’s thawed, drained of excess moisture, and heated through before adding it to the skillet.

Combine Cream and Cheeses: In a large mixing bowl, combine the heavy cream, half of the shredded mozzarella cheese, half of the grated Parmesan cheese, Italian seasoning, red pepper flakes (if using), and a pinch of salt and pepper. Stir the mixture until all ingredients are well blended.

Combine Everything: To the bowl with the cream mixture, add the cooked pasta, diced chicken, and sautéed spinach. Gently fold the ingredients together until the pasta, chicken, and spinach are evenly coated in the creamy mixture.

Transfer to Baking Dish: Pour the entire pasta mixture into a greased 9x13-inch (or similar-sized) baking dish. Spread it out evenly to ensure uniform baking.

Top with Cheese: Evenly sprinkle the remaining mozzarella and Parmesan cheeses over the top of the pasta mixture for a deliciously cheesy crust.

Bake: Carefully place the baking dish in the preheated oven and bake for 25-30 minutes. You're looking for the cheese on top to be bubbly and golden.

Garnish and Serve: Once baked, remove the dish from the oven and allow it to cool for a few minutes before serving. If desired, garnish with fresh basil leaves for a pop of color and flavor.

Prep Time, Total Time, Servings: 15 minutes | 45 minutes | 6 servings.

Presentation Tips: Serve this bake in individual portions on plates, garnished with a sprinkle of extra cheese and a few fresh basil leaves for a delightful finish.
