Ingredients

8 oz (225g) penne pasta

2 tablespoons olive oil

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and freshly ground black pepper, to taste

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) freshly grated Parmesan cheese

1 cup (150g) fresh spinach, roughly chopped

1 teaspoon dried Italian herbs (mix of basil, oregano, and thyme)

Zest of 1 lemon

Juice of 1/2 lemon

Fresh parsley, finely chopped for garnish (optional)

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until al dente—about 8-10 minutes. Drain the pasta in a colander and set aside, ensuring it doesn't stick together.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Generously season the chicken pieces with salt and black pepper. Once the oil is shimmering, add the chicken to the skillet. Cook for about 5-6 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and place it on a plate; set aside.

Sauté Garlic: Lower the heat to medium and add the minced garlic to the skillet. Sauté for about 30 seconds, stirring frequently, to prevent burning, until the garlic becomes fragrant and lightly golden.

Make the Cream Sauce: Pour in the chicken broth, using a wooden spoon to scrape up any browned bits from the bottom of the skillet (this adds flavor!). Allow the broth to simmer for about 2 minutes. Then, add the heavy cream and bring the mixture to a gentle simmer while stirring.

Add Cheese and Spinach: Stir in the grated Parmesan cheese, dried Italian herbs, lemon zest, and lemon juice. Continue cooking for 3-4 minutes, stirring occasionally, until the sauce thickens slightly. Add the chopped spinach and cooked chicken back into the skillet. Mix well until the spinach wilts and everything blends beautifully.

Combine with Pasta: Add the drained penne pasta to the skillet and gently toss to ensure the pasta is well coated with the creamy sauce. Allow it to cook for an additional minute until warmed through, ensuring a delightful amalgamation of flavors.

Garnish and Serve: Taste the dish and adjust the seasoning with more salt and pepper if needed. Serve hot, garnished with finely chopped fresh parsley for a burst of color and freshness.
