Creamy Garlic Chicken and Spinach Pasta

12 oz (340g) fettuccine pasta

2 tablespoons olive oil

1 pound (450g) boneless, skinless chicken breasts, sliced into strips

Salt and pepper, to taste

4 cloves garlic, minced

1 cup (240ml) heavy cream

1 cup (240ml) chicken broth

1 cup (about 30g) grated Parmesan cheese

5 oz (140g) fresh spinach, roughly chopped

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 tablespoon lemon juice

Optional: Fresh parsley, chopped for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain, reserving ½ cup of pasta water, and set aside.

    Sauté the Chicken: In a large skillet over medium-high heat, heat the olive oil. Season the sliced chicken with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Add Garlic: In the same skillet, lower the heat to medium. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.

        Make the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer. Add the grated Parmesan cheese, dried Italian herbs, and lemon juice. Mix well until the cheese is melted and the sauce is creamy.

          Combine Spinach & Chicken: Add the chopped spinach to the sauce, cooking until wilted, about 2-3 minutes. Incorporate the sautéed chicken strips back into the skillet, ensuring everything is well mixed. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

            Toss the Pasta: Add the cooked fettuccine to the skillet, gently tossing it in the sauce to ensure it is well-coated. Taste and adjust seasoning with salt and pepper if necessary.

              Serve: Plate the creamy garlic chicken and spinach pasta, drizzle with extra Parmesan cheese if desired, and garnish with chopped parsley. Serve hot.
