Creamy Mushroom and Spinach Risotto

1 cup Arborio rice

4 cups vegetable or chicken broth

1 cup fresh spinach, roughly chopped

1 cup mushrooms, sliced (cremini or button)

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup dry white wine (optional)

1/2 cup grated Parmesan cheese

3 tablespoons unsalted butter

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Broth:

    In a medium saucepan, pour in the vegetable or chicken broth. Warm it over low heat, ensuring it stays hot but does not reach a boil, as this will help the risotto absorb the liquid evenly as it cooks.

      Sauté the Mushrooms:

        In a large skillet, heat 1 tablespoon of olive oil over medium heat. Introduce the sliced mushrooms into the skillet, cooking them for about 5-7 minutes until they are golden brown and have released their moisture. Season the mushrooms with a pinch of salt and pepper. Once cooked, transfer them to a plate and set aside.

          Cook the Aromatics:

            In the same skillet, add another tablespoon of olive oil and the three tablespoons of unsalted butter. Allow the butter to melt before adding the finely chopped onion. Sauté the onion for 3-4 minutes until it becomes translucent. Add the minced garlic and continue cooking for another minute, making sure not to let the garlic burn.
