Creamy Mushroom & Spinach Lasagna

9 lasagna noodles

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

16 ounces mushrooms, sliced (button or cremini)

4 cups fresh spinach, tightly packed

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and freshly cracked black pepper, to taste

2 cups ricotta cheese

1 large egg, beaten

2 cups shredded mozzarella cheese, divided

1 cup grated Parmesan cheese, divided

2 cups marinara sauce

Fresh basil leaves, for garnishing

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking.

    Cook the Noodles: In a large pot, bring salted water to boil. Cook the lasagna noodles according to the package instructions until they are al dente (firm to the bite). Once cooked, drain them well and set aside to cool.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes or until the onion becomes translucent. Next, incorporate the sliced mushrooms, cooking them for another 5-7 minutes until they release their moisture and get a nice golden-brown color.

        Add Spinach and Seasonings: Stir in the fresh spinach along with the dried thyme and oregano, seasoning with salt and freshly cracked black pepper. Cook until the spinach is wilted, approximately 2-3 minutes. Once done, remove the skillet from heat and let the mixture cool slightly.

          Prepare the Cheese Mixture: In a medium-sized mixing bowl, combine the ricotta cheese, beaten egg, 1 cup of shredded mozzarella, and ½ cup of grated Parmesan. Mix until smooth and creamy. Season the mixture lightly with a pinch of salt and pepper.

            Assemble the Lasagna: In a 9x13-inch baking dish, start by spreading a layer of marinara sauce (about ½ cup) evenly across the bottom. Lay down 3 lasagna noodles on top of the sauce. Spread half of the ricotta mixture over the noodles, followed by half of the sautéed mushroom and spinach mixture. Drizzle with more marinara sauce. Repeat the layering with the remaining noodles, ricotta mixture, mushrooms and spinach, and marinara sauce.

              Top with Remaining Ingredients: For the final layer, arrange the last 3 lasagna noodles on top. Spread the remaining marinara sauce over the noodles, then evenly sprinkle the remaining mozzarella and Parmesan cheeses on top.

                Bake: Cover the baking dish with aluminum foil, ensuring it doesn’t touch the cheese. Bake in the preheated oven for 25 minutes. Afterward, carefully remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden on top.

                  Rest and Serve: Once baked, allow the lasagna to rest for 10 minutes before slicing. This helps set the layers. Garnish each serving with fresh basil leaves for a burst of flavor and color before serving.
