Ingredients

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

8 ounces mushrooms, sliced (cremini or button)

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

12 ounces pasta (fettuccine, penne, or any pasta of your choice)

1 cup grated Parmesan cheese

1 cup fresh spinach

1 teaspoon Italian seasoning

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Sauté the Chicken: In a large pot or deep skillet, heat the olive oil over medium-high heat. Season the chicken pieces evenly with garlic powder, onion powder, salt, and black pepper. Add the seasoned chicken to the pot and sauté for about 5-7 minutes, or until the chicken is golden brown and cooked through. Once done, remove the chicken from the pot and set it aside on a plate.

Cook the Mushrooms: In the same pot, add the sliced mushrooms along with a pinch of salt. Sauté the mushrooms for about 4-5 minutes, or until they release their juices and turn golden brown. Then, stir in the minced garlic and cook for an additional minute, or until fragrant.

Deglaze and Combine: Pour in the chicken broth and using a wooden spoon, scrape up any flavorful browned bits stuck to the bottom of the pot. Bring the mixture to a gentle simmer.

Add Cream and Pasta: Gradually stir in the heavy cream and return the mixture to a simmer. Then, add the pasta along with the Italian seasoning, ensuring that the pasta is fully submerged in the liquid. If necessary, add a little more broth or water to cover the pasta.

Cook the Pasta: Cover the pot with a lid and cook the pasta according to the package instructions, stirring occasionally for even cooking. This typically takes around 10-12 minutes, or until the pasta reaches al dente tenderness.

Finish the Dish: After the pasta is cooked, return the sautéed chicken to the pot, mixing it in thoroughly. Stir in the grated Parmesan cheese, followed by the fresh spinach, allowing it to wilt for 1-2 minutes. Taste the dish and adjust seasoning with additional salt and pepper, if needed.

Serve: Spoon the creamy, delicious pasta into deep bowls and sprinkle with freshly chopped parsley for a burst of color. Serve warm and savor your delightful one-pot meal!
