2 cans (28 oz each) whole peeled tomatoes, including their juices

2 cups vegetable broth (or chicken broth for non-vegetarians)

1 teaspoon granulated sugar

Salt and freshly ground black pepper to taste

1 cup fresh basil leaves, roughly chopped (reserve extra for garnish)

1 cup heavy cream (substitute with coconut cream for a dairy-free alternative)

Juice of 1 lemon

8 slices of your favorite bread (sourdough or whole wheat recommended)

8 ounces sharp cheddar cheese, sliced

Butter, for grilling

Sauté the Aromatics: In a large pot, warm the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes soft and translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Blend the Soup: Once the soup has simmered, remove the pot from the heat. Using an immersion blender, puree the soup until completely smooth. Alternatively, you can transfer the soup to a countertop blender in batches—ensure you allow steam to escape while blending to prevent splatters.
