Ingredients

2 medium zucchini, sliced into fry-shaped sticks

1 cup breadcrumbs (preferably whole wheat or panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs

1 tablespoon olive oil

Cooking spray

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper and spray it lightly with cooking spray to prevent sticking.

Prepare Zucchini: Wash and dry the zucchinis. Cut off the ends and slice them into fry-shaped sticks, about 1/4 inch thick. Ensure they are uniform to promote even cooking.

Set Up the Breading Station: In a shallow bowl, whisk together the eggs and olive oil until well combined. In a separate bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and black pepper.

Bread the Zucchini Fries: Dip each zucchini stick into the egg mixture, allowing any excess to drip off. Then, roll it generously in the breadcrumb mixture until it's fully coated. Place the coated zucchini fries on the prepared baking sheet in a single layer.

Bake to Perfection: Once all the fries are coated, spray the tops lightly with cooking spray to enhance crispiness. Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until the zucchini fries are golden brown and crispy.

Serve and Enjoy: Remove the fries from the oven when they are perfectly crunchy. Allow them to cool slightly before serving. Pair with your favorite dipping sauce, like marinara or ranch, for an added flavor burst!
