2 medium zucchinis

1 cup panko breadcrumbs (for an extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon paprika

2 large eggs

Salt and pepper, to taste

Cooking spray or extra virgin olive oil for drizzling

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and allow for easy cleanup.

    Prepare the Zucchini: Carefully wash and dry the zucchinis. Trim off the ends and slice each zucchini lengthwise into quarters. Ensure the sticks are about 1/2 inch thick for optimal baking.

      Set Up the Breading Station: Take two shallow bowls - in one, crack and beat the eggs until well mixed. In the other bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, paprika, and a pinch of salt and pepper. Mix well to ensure the seasonings are evenly distributed.

        Bread the Zucchini: Dip each zucchini stick into the egg mixture, letting any excess drip off. Then, roll the stick in the breadcrumb mixture, pressing gently to ensure each piece is well-coated with the crispy mixture.
