Ingredients

1.5 lbs ground turkey

3 cups fresh hatch green chiles, chopped (substitute with canned if fresh are unavailable)

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) fire-roasted diced tomatoes with green chilies

1 tablespoon ground cumin

1 tablespoon chili powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup chicken broth (or vegetable broth)

4 cups cooked rice (white, brown, or cauliflower rice for a low-carb alternative)

Fresh cilantro, chopped (for garnish)

1 lime, cut into wedges (for serving)

Avocado slices (optional, for topping)

Sour cream (optional, for serving)

Instructions

Brown the Turkey: Heat a skillet over medium heat. Add the ground turkey and cook, breaking it apart with a spatula, until it's no longer pink, taking about 5-7 minutes. If there's excess fat, drain it off. Transfer the browned turkey to a crockpot.

Add the Vegetables: To the crockpot, add the chopped hatch green chiles, diced onion, minced garlic, black beans, corn, and the fire-roasted diced tomatoes. Stir to mix all the fresh ingredients together.

Season and Mix: Evenly sprinkle in the ground cumin, chili powder, smoked paprika, salt, and black pepper. Pour in the chicken broth and stir thoroughly to ensure all ingredients are well combined.

Cook: Cover the crockpot with its lid. Cook on ‘low’ for 6-8 hours or on ‘high’ for 4 hours, allowing the flavors to meld together and ensuring the turkey is fully cooked.

Prepare Rice: About 30 minutes before you’re ready to serve, cook your chosen type of rice according to the package instructions, ensuring it’s fluffy and ready for your bowls.

Assemble Bowls: In each serving bowl, place a generous scoop of rice at the bottom. Top it with a hearty serving of the hatch chili turkey mixture.

Garnish: Finish off by sprinkling fresh cilantro on top, adding a squeeze of lime juice for brightness. For an extra creamy texture, add optional avocado slices and a dollop of sour cream.

Serve: Enjoy your Spicy Hatch Chili Turkey Bowls warm for a delicious, hearty meal that’s packed with flavor!
