Ingredients

2 cups dried white beans (cannellini or great northern), thoroughly rinsed

4 cups vegetable or chicken broth

2 cups fresh or frozen Hatch green chilies, roughly chopped (approximately 6-8 medium chilies)

1 medium yellow onion, finely diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon salt (adjust according to taste)

1/4 teaspoon freshly ground black pepper

1 cup corn (fresh or frozen)

1 tablespoon freshly squeezed lime juice

Optional toppings: sour cream, freshly chopped cilantro, diced avocado, shredded cheese, lime wedges

Instructions

Prepare the Beans: Start by rinsing the dried white beans under cold running water to cleanse them and remove any debris. If you have time, consider soaking them in water overnight to soften them; however, soaking is optional.

Mix Ingredients: In a large crockpot, combine the rinsed beans, chopped Hatch chilies, diced onion, minced garlic, ground cumin, smoked paprika, chili powder, salt, and black pepper. Stir the mixture thoroughly to ensure all the ingredients are evenly distributed.

Add Broth: Pour the vegetable or chicken broth over the mixture, ensuring all ingredients are completely submerged. Use a spoon to stir well, merging all the flavors together.

Cook: Cover the crockpot with its lid and set it to low heat for 6-8 hours or high heat for 4-5 hours. Monitor the beans for desired tenderness, as cooking times can vary depending on the specific type and age of the beans.

Add Corn: Approximately 30 minutes before the cooking time is completed, add the corn to the pot. This will ensure the corn warms through while maintaining its crispness.

Finishing Touches: Once the cooking time is up and the soup is bubbling, stir in the fresh lime juice for a bright flavor boost. Taste the soup and adjust the seasoning as desired.

Serve: Ladle the hearty soup into individual bowls. Elevate your dish by garnishing with your selections of sour cream, fresh cilantro, diced avocado, or shredded cheese. Serve with a lime wedge on the side for an extra zing!
