Ingredients

1 lb boneless, skinless chicken breasts

2 cans (15 oz each) white beans (e.g., cannellini or great northern), rinsed and drained

1 medium onion, finely diced

3 cloves garlic, minced

1 can (4 oz) diced green chiles

1 cup frozen corn kernels

2 cups low-sodium chicken broth

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp salt (or to taste)

1/4 tsp freshly ground black pepper

1 cup cream cheese, cut into small cubes

1 tbsp fresh lime juice

Fresh cilantro, chopped (for garnish)

1 avocado, diced (for garnish)

Shredded cheese (e.g., Monterey Jack or cheddar, for garnish)

Instructions

Prepare the Chicken: In the base of a slow cooker, place the boneless, skinless chicken breasts in a single layer.

Add Veggies and Beans: Layer the finely diced onion, minced garlic, diced green chiles, rinsed white beans, and frozen corn on top of the chicken.

Season the Mixture: Pour the low-sodium chicken broth evenly over the layered ingredients. Sprinkle the ground cumin, chili powder, smoked paprika, salt, and black pepper on top. Gently stir to combine without disturbing the chicken too much.

Cook: Cover the slow cooker and choose the cooking setting: cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.

Shred the Chicken: Once cooked, carefully remove the chicken breasts from the chili using tongs or a slotted spoon. Using two forks, shred the chicken into bite-sized pieces and return it to the slow cooker.

Add Cream Cheese: Stir in the cubed cream cheese until fully melted and blended into the chili, creating a rich and creamy texture.

Finish It Up: Drizzle in the fresh lime juice and stir to combine well. Taste the chili and adjust the seasoning with additional salt or pepper if desired.

Serve: Ladle the cozy white chicken chili into bowls and garnish each bowl with a sprinkle of chopped cilantro, diced avocado, and a generous amount of shredded cheese for extra flavor.
