Ingredients

12 oz fettuccine pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and black pepper, to taste

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh spinach leaves, roughly chopped

1 cup frozen peas, thawed

1 teaspoon garlic powder

1 teaspoon Italian seasoning blend

Fresh parsley, finely chopped (for garnish)

Instructions

Cook the Fettuccine:

    - Bring a large pot of salted water to a rolling boil. Add the fettuccine pasta and cook according to the package directions until al dente, typically about 8-10 minutes. Drain the pasta, reserving about 1 cup of the starchy pasta water, and set aside.

      Cook the Chicken:

        - In a large skillet, heat the olive oil over medium heat. Season the chicken pieces generously with salt and pepper. Carefully add the seasoned chicken to the hot skillet and sauté for 5-7 minutes, or until the chicken is golden brown and cooked through. Once done, remove the chicken from the skillet and place it on a plate, keeping it warm.

          Sauté the Garlic:

            - In the same skillet, lower the heat slightly and add the minced garlic. Sauté for about 30 seconds, stirring constantly, until the garlic is fragrant but not browned.

              Make the Alfredo Sauce:

                - Reduce the heat to low and pour the heavy cream into the skillet with the garlic. Stir continuously until the cream begins to simmer gently. Gradually whisk in the grated Parmesan cheese, allowing it to melt into the cream and create a smooth, creamy sauce. If the sauce becomes too thick, add a splash of the reserved pasta water to reach your desired consistency.

                  Add Spinach and Peas:

                    - Incorporate the chopped spinach, thawed peas, garlic powder, and Italian seasoning into the sauce. Stir well and cook for an additional 2-3 minutes, or until the spinach is wilted and the peas are heated through.

                      Combine Chicken and Pasta:

                        - Return the cooked chicken to the skillet and add the drained fettuccine. Gently toss all the ingredients together until the pasta is well coated with the creamy sauce and everything is evenly combined.

                          Serve:

                            - Plate the creamy chicken Alfredo into bowls and garnish generously with chopped fresh parsley. Enjoy your sumptuous, homemade meal!
