Easy Chicken Fajita Quesadillas for Family

2 cups cooked chicken breast, shredded or diced

1 tablespoon olive oil

1 bell pepper (any color), sliced into thin strips

1 medium onion, sliced into thin strips

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and freshly ground pepper, to taste

4 large flour tortillas

2 cups shredded cheese (cheddar or a Mexican blend)

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced bell pepper and onion. Sauté for approximately 5-7 minutes, stirring occasionally, until the vegetables become tender and develop a light caramelization.

    Season the Chicken: Add the shredded chicken to the skillet along with the chili powder, ground cumin, garlic powder, and a pinch of salt and pepper. Stir to combine all the ingredients thoroughly. Cook for an additional 3-4 minutes, allowing the chicken to heat through and the seasonings to infuse the mixture. Remove the skillet from heat.

      Assemble the Quesadillas: Preheat a clean skillet or griddle over medium heat. Place one tortilla in the skillet. On one half of the tortilla, sprinkle ½ cup of shredded cheese. Layer approximately ¾ cup of the chicken and vegetable mixture over the cheese. Top this with another ½ cup of cheese, then carefully fold the tortilla in half to encase the filling.

        Cook the Quesadilla: Cook the folded quesadilla for about 3-4 minutes on one side, or until it turns a golden brown. Use a spatula to carefully flip the quesadilla and cook for another 3-4 minutes on the other side, until crispy and the cheese is thoroughly melted. Once cooked, remove the quesadilla from the skillet and keep warm.

          Repeat the Process: Continue the assembly and cooking process with the remaining tortillas and filling until you have cooked all the quesadillas.
