1 lb (450g) large shrimp, peeled and deveined

2 tablespoons honey

3 tablespoons soy sauce

1 tablespoon fresh garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, sliced into thin strips

1 cup snap peas, trimmed

1 medium carrot, julienned

2 tablespoons vegetable oil

2 green onions, chopped (for garnish)

Sesame seeds (for garnish, optional)

Salt and pepper to taste

Cooked rice or noodles (for serving)

Instructions
 

Prepare the Sauce: In a small bowl, mix the honey, soy sauce, minced garlic, and minced ginger until well combined. Set aside.

    Cook the Shrimp: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and season with a little salt and pepper. Sauté for 2-3 minutes, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced bell pepper, snap peas, and julienned carrot. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.

        Combine Shrimp and Sauce: Return the cooked shrimp to the skillet with the vegetables. Pour the honey garlic sauce over everything and toss to combine. Cook for an additional 2-3 minutes until the sauce thickens slightly and coats the shrimp and vegetables evenly.

          Serve: Remove from heat, garnish with chopped green onions and sesame seeds (if using). Serve the honey garlic shrimp stir-fry over cooked rice or noodles for a complete meal.
