Ingredients

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup bell peppers (choose from red, green, or yellow), diced

1 cup fresh spinach, chopped

1/2 cup red onion, finely chopped

1 cup corn (canned or frozen)

1 teaspoon olive oil

1 teaspoon garlic powder

1 teaspoon ground cumin

1/2 teaspoon paprika

Salt and freshly ground black pepper to taste

Sour cream and salsa for serving (optional)

Instructions

Prepare the Vegetable Mixture: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the diced bell peppers, chopped spinach, and finely chopped red onion. Sauté the vegetables for about 5-7 minutes, or until they become tender and vibrant. Stir in the corn along with garlic powder, ground cumin, paprika, salt, and pepper. Cook the mixture for an additional 2 minutes before removing it from the heat.

Heat the Tortillas: In a separate skillet (or you can reuse the same skillet after transferring the veggie filling), place one flour tortilla over medium-low heat. For added flavor and richness, you may choose to lightly butter the tortilla before heating.

Layer the Cheese and Veggies: On one half of the heated tortilla, sprinkle a generous layer of both cheddar and mozzarella cheese (approximately 1/3 cup total). Next, pile high a generous portion of the sautéed vegetable mixture over the cheese.

Fold and Cook: Carefully fold the tortilla in half to form a half-moon shape. Cook the quesadilla for about 3-4 minutes or until the bottom is golden brown and crispy. Gently flip the quesadilla using a spatula and cook for an additional 3-4 minutes on the other side, allowing the tortilla to crisp up nicely and the cheese to melt.

Slice and Serve: Once cooked, transfer the quesadilla from the skillet and let it sit for a minute before slicing it into wedges. Repeat the process with the remaining tortillas and filling. Serve while warm, accompanied by sour cream and salsa for dipping, if desired.
