2 cups apples, peeled, cored, and diced (approximately 3 medium apples)

1 tablespoon fresh lemon juice

2 tablespoons granulated sugar

1 teaspoon ground cinnamon

1 tablespoon cornstarch

For the Yogurt Layer:

2 cups plain Greek yogurt

½ cup honey or maple syrup (adjust based on desired sweetness)

1 teaspoon pure vanilla extract

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it's hot and ready for baking.

    Prepare the Crust and Crumble: In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, melted butter, ground cinnamon, and salt. Use a fork or your fingers to mix until the mixture has a crumbly texture. Set aside half of this mixture for the crumble topping. Press the remaining mixture firmly into the bottom of a greased 8x8 inch baking dish to form the crust. Bake in the preheated oven for 10-12 minutes or until the crust is lightly golden. Remove from the oven and let it cool slightly.

      Make the Apple Filling: In another medium bowl, combine the diced apples with fresh lemon juice, granulated sugar, ground cinnamon, and cornstarch. Toss together until the apples are evenly coated with the mixture.
